Stevia rebaudiana the sweet herb of Paraguay (native of Rio Monday in highlands of Paraguay) commonly know as Honey Leaf, is christened as MADHU PATRA for the Indian market by the ASR GROUP. Stevia is gaining significance in different parts of the world and is expected to develop into a major source of high potency sweetener, for the growing natural food market. Stevia rebaudiana is one of the genus Stevia and one of the only two species that produce sweet di-terpene glycosides in the leaves. The stevioside content in the leaves vary between 6-16% percent depending on the variety, which is 250 times sweeter than table sugar but 100% calorie free. It is highly stable at a wide range of Ph and up to 180 C, thus being an excellent sweetener for Industrial processing. It is reported that the dried leaf itself is 20 times sweeter than table sugar. The leaves of Stevia for long have been used by the natives of Paraguay as a general sweetening agent in addition to being touted as a remedy for diabetes in Paraguay and Brazil. Japanese have found Stevia extract without health risk, now incorporate it in numerous food products, including candies, ice cream, pickles, and soft drinks. Exploiting the uses of this Non-Caloric Sweetener will open new avenues in the food and herbal medicine as an alternative source of natural sugar.
